Hestia is an entirely Texan take on high-end dining, with live fire cooking and warm, welcoming service. Set within an austere glass development, the interior is all organic textures with leather seating and charred wood walls, making for a cosy dining room dominated by the open kitchen and its vast fire pit. Guests can opt to dine à la carte or indulge in the chef's tasting menu, but either way we'd advise a thorough exploration of the 250-bin wine list. Dishes are prepared with a lightness of touch you might not expect from a grill ̶ like the oysters with buttermilk, celery and smoked white fish roe, or kampachi crudo with pear, yaupon and green onion ̶ but if you're in the market for something heartier then you're covered too, with cuts of Texas wagyu cooked over flames and served with sides like grilled tomato, potato croissant and smoked cheese.
