Every good barkeep knows aroma plays a huge role in the experience of a cocktail, and this avant-garde offering takes that focus a step further by centering the entire concept around the 'harmony between flavour and fragrance,' by pairing cocktails with perfumes created by sister company Sfumato. At the stroke of 5pm from Wednesday to Saturday, the industrial chic retail Sfumato space – located on the lower level of a Victorian mansion in Midtown – converts into Castalia, an 18-seat bar featuring a dialed-in collection of experimental cocktails that rotate seasonally. Co-owner Kevin Peterson’s book Cocktail Theory, which explores the philosophy behind the programme, is available for purchase at the bar. Guests have the option of booking prepaid reservations for 90 minutes, and private classes are also offered for groups, but walk-ins receive a similarly welcome.
