From the team behind sushi omakase restaurant Noda, Shinji’s is named after the famous 'Tokyo fixer,' Shinji Nohara, the person everyone turns to for recommendations on where to eat and drink in Japan. At the small 18-seat bar, beverage director Jonathan Adler takes a maximalist approach to cocktails, using high-tech behind-the-scenes techniques and tools to pre-batch drinks for service. Cocktails like the Tropicana fully exemplify this: it took 18 months for the bar team to develop the recipe, which features homemade orange liqueur, vodka, orange liqueur, orange peels and dextrose and is served in a hollowed-out frozen orange. Another sparkling jewel of the menu is the small collection of bar bites, which features seasonal fish flown in directly from Japan, plus tableside hand roll service, uni, and caviar options.
