One must pass by an impressive illuminated dry aging meat locker to find the entrance to Undercote, the aptly named cocktail bar located underneath chef Simon Kim’s notorious Korean steakhouse in NYC’s Flatiron district. The cocktails are as dramatic as the black, jungle-like decor, albeit presented without too much fanfare, as principal bartender Sondre Kasin uses behind-the-scenes techniques to update familiar classics like the margarita and boulevardier. Small bites from the restaurant upstairs are worth the price of entry – chicken nuggets with gochujang glaze, or the Steak and Eggs, a hand-cut filet mignon tartare served with caviar and milk toast, are the perfect elevated bar snacks to accompany the refreshing drinks.
