Named after 19th-century dancer Lola Montez, Wildhawk has a female-led bar team, and an interior with a bit of a boudoir feel: monochrome florals and pops of emerald green. The drinks list is focused on vermouth, with a centrepiece signature Martini, alongside a choice of 'Refreshing' drinks like The Full Monty: amaro, añejo rum, palo cortado sherry, white vermouth, egg white, lime and bitters and more 'Spirituous' creations like The Breakfast Negroni, which infuses the classic gin, bitter and sweet vermouth mix with Coco Puffs and adds a dash of chocolate bitters for good measure. Food is simple and effective, with a choice of grazing boards and flavour-packed nibbles like anchovy-stuffed olives.
