This self-styled whisky and bitters emporium is a shrine to the art of bartending, with shelves groaning under the weight of one of the world’s largest spirit selections ("at 4,000 labels and counting"). Antique furniture, vintage gramophones and a bar stained with Angostura bitters make up the rest of the decor. Drinks here come from some seriously skilled hands, but are mostly three-ingredient affairs, imparting carefully balanced depth and flavour. Canon burst into the top ten of the World’s 50 Best Bars in 2014 and has remained a firm industry favourite ever since.
