A diverse mix of ingredients and vibrant flavours has propelled Peruvian cuisine into the global spotlight, but the US was slow to embrace the style until dual-concept restaurant Causa/Amazonia exploded in DC. The Blagden Alley destination from Chef Carlos Delgado and Service Bar owners Chad Spangler and Glendon Hartley offers a casual, loungey dining space upstairs (Amazonia) along with a more traditional restaurant downstairs (Causa).
At Causa, Delgado’s tasting menu presents a culinary tour of Peru from coast to rainforest to mountains. While the elevated rice dishes and generous use of leche de tigre delight, the programme really shines through whole fish supplements proudly displayed in aging cabinets and a market area. After guests pick their catch, Delgado goes to work, conjuring crudo and roasted sides from the fish. At Amazonia's buzzing indoor/outdoor space above, Peru’s native spirit, pisco, takes centre stage through both traditional sours and innovative originals. Guests can further indulge in anticucherias, ceviches and shareable plates. Like Peru’s rich dining traditions, Causa/Amazonia offers a diverse experience for all tastes.
