Capitalising on the enormous popularity of Rose's Luxury, his casual restaurant next door, chef Aaron Silverman opened this fine-dining follow-up in 2016. Fittingly, he called it Pineapple & Pearls, the former a symbol of hospitality and the latter of elegance. Just as the queue for a table at Rose's often snakes down the block, the tasting menu experience here can stretch for hours. Creative beverage pairings range from sake and wine to tea and cocktails.
