When Texan chef Shaw Lash decided to open up a Mexican taco spot near the beachfront in Dubai in 2022, she set out with a purpose to bring her deep knowledge of Mexican ingredients to this part of the world. She and her team turned out around 800 tacos a day, following traditional techniques and styles she learned to craft and create during her time working in Mexican restaurants in various parts of the world. But Lash not only wanted to bring these wood-fired two-bite wonders to the Middle East, she set out to source the best possible ingredients. Heirloom corn actually comes direct from Mexico, while fish and seafood are locally caught – and used in crab toasts, as well as Lila's Pescado a la Talla, which nods to the legendary Contramar seafood restaurant in Mexico City. Jalapenos, tomatillos and serrano chiles also grow on a nearby farm. The lamb al pastor tacos are often so popular that they sell out early, so get your hands on them as close to 3pm opening as possible.
