- No.11 The World's 50 Best Restaurants 2023
Unparalleled theatre and mind-blowing Indian cuisine await diners at Trèsind Studio. It moved to a standalone site in 2022 after acting as a test kitchen to sister restaurant Trèsind and its success has been sensational. Imperiously talented young chef Himanshu Saini, who is considered one of the region’s up-and-coming stars, is keen to retain his Indian roots with innovative spins on traditional dishes from the sub-continent that are often vegetable forward. Leading the front-of-house team, restaurant manager Vipin Pawar entertains guests with interactive experiences during almost every course. On arrival, diners are taken immediately to the pass, introduced to the team and offered their first dish. During the following 15 courses, expect to be whisked around all four corners of the restaurant – and even to be served in the dark. Ghee-roasted crab, duck leg confit and pani puri with sweet potato are some of the star dishes, paired magnificently with cocktails from the bar. Trèsind Studio takes its whisky seriously, so if you want a top tipple, order the house-smoked Old Fashioned.
