As Vietnam’s drinks scene soars, so too do does Nê, one of Hanoi’s first bars to help blaze a trail toward modern cocktail culture. Established in 2017, close to evergreen Hoàn Kiếm lake, the sultry slip of a bar (look for the neon sign and cell-style door) heroes a rough-around-the-edges, quasi-European styling with a laid-back vibe and a stage for live music. Tastemaker Pham Tien Tiep is the brains behind it, bringing with him his award-winning Pho cocktail, developed during his time at the iconic Metropole hotel and inspired by the street food of his youth. It’s a theatrical pour that sees three tiers of flames lick the liquor before it reaches the glass, with spice-infused gin taking punters on an inventive journey of scent and flavour starting with heady pho and hitting all the key local herbs by way of refreshment along the way. Elsewhere, a caffeine-forward Lockdown! featuring tequila, coffee, black tea and cacao will keep you going through the night.
