The architecture sets the tone at Sushi Rei: designed by Japanese-born, Vietnamese-based Joe Chikamori, the contemporary, no-frills space transports Ho Chi Min City diners to Japan, using materials imported from the Land of the Rising Sun. Over 4,000 pieces of Kyoto hinoki wood line the walls, creating the illusion of fish scales, while a minimalist wood counter puts eight diners face-to-face with the chef. Since opening in 2015, the restaurant has stayed true to its original ethos, offering three sizes of authentic, Edo-style omakase menus. A seasonal selection of raw fish is flown in from Tokyo’s Toyosu fish market, and special requests, including oysters, blowfish, pine needle crab and abalone, are accommodated. The chef’s attention to detail is unmatched: three types of Hokkaido uni offer distinct flavours, while uni shrimp is prepared based on the day's quality. Prices remain modest for top-tier Japanese dining.
