The return of Argentine fine dining

What makes it special? In a city where tasting menus have been eschewed for casual dining, one young chef is determined to serve haute cuisine. Trescha opened in 2022 in the trendy Villa Crespo neighbourhood of Buenos Aires in a beautiful casona (mansion), and creates a 14-course menu served to just 10 diners seated at a kitchen counter.

About the chef: Tomás Treschanski followed his passion for the culinary arts and trained in London before undertaking various stages at the likes of Azurmendi, Barrafina, Frantzén, 108 and Boragó. Aged just 25, he opened Trescha with the aim of following the fine dining ideals of those restaurants, but using mostly Argentine ingredients.

Behind the scenes: Treschanski takes research and development seriously and has a dedicated team working in the Test Kitchen, the heart of the project, to develop the ever-changing 14-course menu.

What’s the concept? An immersive experience, dinner starts at the bar before moving to the chef’s counter, where the kitchen team moves seamlessly as one. Dessert is taken on the outdoor patio, while the wine cellar is world class.

On the menu: Focusing on a key ingredient per course, Treschanski takes it to a new level. Paso Lengua, for example, takes tongue to new extremes: braised and served with aged chimichurri, onion, endives, pollen and black; tongue mortadella in a rye sandwich with sweet chilli, quince, huacatay mint and 35-year-old balsamic vinegar; and puff pastry brioche with pollen.
