Managing to tread the line between cosy and cool thanks to brushed cement floors and pine-green paintwork, this 22-cover restaurant has remained a favourite with well-heeled locals since opening in 2019. Christened after founder Julio Martín Báez’s daughter and opened without investor backing, it serves what it refers to as ‘indie food’: confident, colourful dishes of no more than five seasonal ingredients, presented with delightful dynamism. Although the restaurant’s website claims menus do not draw on outside influences, Báez’s sophisticated technique references the illustrious list of places he has worked throughout France and Latin America. Bright splodges of experimental sauces nod to landmark French restaurant Mirazur, scatterings of delicate flowers and fresh herbs are straight out of fine-dining legend Aramburu, while the skilful balance of salt, sweet, sour and savoury in every plate references Báez’s background in biochemistry at La Plata University. It’s a winning formula.
