Beautifully contrasting the airy, bright Bar Astor above it, Sub Astor is a dark, subterranean secret of a drinking den – an immersive cocktail hideaway to forget about the world above for a while. Beyond the velvet curtains down some stairs you’ll find a space that’s dimly, moodily lit, highlighted by pink neon. There are low tables and comfortable seating throughout the room, but there’s plenty of room at the bar, for a front row seat to the real action, the ambitious, top-end cocktails created by highly-capable bartenders. Influences come from far and wide, but are grounded in local Brazilian flavours and ingredients, with each cocktail referencing a region of the country. For the tropical savanna of Cerrado, for example, there’s Café, with gin and reposado tequila, cold brew coffee, portobello mushroom, coconut sugar, coconut oil, and pequi, finished off with a smoked spray.
