It’s all about the whisky at São Paulo’s Caledonia. Born out of Brazilian whisky blog O Cão Engarrafado (the bottled dog), this is a comfortable space to explore the world’s whiskies via the bar’s collection of about 130 bottles, each served in 25ml or 50ml measures, with various themed flights available. And if there’s something you like, the attached whisky shop offers bottles for sale. Cocktails, meanwhile, are by award-winning Brazilian bartender Rodolfo Bob, who tells the story of whisky over the course of seven cocktails, starting with the King James, referencing whisky’s origins in Ireland, via Volstead and the Prohibition era, and ending with Inspirit, marking the growth in interest in single malt in recent decades. The latter is made with Arran Lochranza, Lichia Vermouth, Jerez vinegar and wine salt, served in a coupe.
