With a name that means ‘soul’ in Spanish, it’s no surprise this modern cocina drills right to the heart of what makes Mexican food so renowned: warm, friendly hospitality, and a reverence for corn. Chef Juan Lopez Luna – who left Mexico at the age of 16 – built the restaurant around an in-house nixtamalization programme that transforms heirloom corn from Tlaxcala into the most delectable tortillas. Supplementing with fresh local ingredients from the Quebec region, Luna filters tacos and other humble Mexican dishes through a modern lens, offering a colourful 5 or 9-course tasting menu in addition to a la carte offerings. Luna’s wife Lindsay Brennan is the business partner and sommelier at the small restaurant, selecting exquisite natural wines from Catalan and Spanish winemakers. Together, the couple have created a meaningful and memorable homage to Mexico, in Canada.
