When Grapes & Soda opened in Vancouver’s South Granville neighbourhood in 2015, it was the city’s first bar to focus entirely on natural wines. In addition to the compelling wine list, that spans a range of biodynamic and natural labels that change frequently, it also features a crowded backbar, including many small-batch local spirits, plus a fun assembly of spirits from Mexico. With only enough space for one bartender behind the stick at a time, the bar staff pre-batch some ingredients to keep service speedy. Food-wise, the sibling bar to Farmer’s Apprentice shows the same thoughtful care for fresh seasonal ingredients via a small selection of local cheese, charcuterie and desserts.
