When Lamdre won the American Express One to Watch Award 2024 as part of Asia’s 50 Best Restaurants, it marked new strides for Chinese plant-based cuisine. Owner Zhao Jia and chef Dai Jun sit at the vanguard of a veg-first dining scene, blending elements of heritage Chinese cooking with contemporary fine dining touches.Located within a serene courtyard building in the Sanlitun neighbourhood, this restaurant’s minimalist interiors – all natural hues, pitched roof, hand-selected Japanese ceramics and sunlight streaming through skylights – match the restaurant’s preference for simple, elegant cooking. Beijing-born Dai Jun is classically trained in Cantonese and Chaozhou technique but became a pioneer in plant-based cooking following stints at Vege Wonder and King’s Joy, the city’s cathedral to all things edible and green. Now, he transforms native Chinese ingredients into storied dishes that evoke the landscapes they were plucked from, showcasing lesser-seen ingredients such as arrowhead roots and gingko nuts for a season-driven set menu. His tofu coddled in matsutake and wakame broth is a signature. The wine list features organic, biodynamic bottles alongside the house Chinese yellow wine from Zhejiang.
