Located at the base of the Hilton Cairo Zamalek Residences, Makino’s unprepossessing entrance gives no hint of the Nile view that awaits diners, either from the riverside terrace or the dining room decorated in regulation Japanese light woods and neutral colours. Sushi and sashimi come from a raw-fish counter while a grill station produces yakitori skewers; the restaurant is owned by a manufacturer of Japanese machinery and authentic cooking and a clientele of Japanese expats are both guaranteed. Expect salmon, tuna and sea bass sashimi, spider rolls of softshell crab and avocado, prawn tempura with miso soup, as well as grilled cuttlefish, beef ramen and tofu salad.
