Bakeries are the new bars, with the hottest in every city achieving cult-like status and queues that snake around the block. In Cairo the chicest sourdough slingers in town have created Ratios in the Maadi neighbourhood. Open for breakfast and lunch seven days a week either for take away or for guests to dine out in the leafy back garden. Specialities include macarons, madeleines and even marshmallows alongside some classic viennoiserie and specialities like cruffins and a croissant loaf (24 hours' notice required for the latter for fairly obvious reasons). There's a community feel to Ratios, which makes sense given it is run by a couple and was initially an Instagram-based enterprise that has evolved into a bustling local hub filled with young professionals and families.
