Many restaurants claim to be on a journey to zero waste but Nolla – the Finnish word for ‘zero’ – is the real deal. Staff wear aprons made from recycled bed sheets, an on-site brewery turns food waste into craft beer, drinks are served in repurposed glass bottles and no packaging is accepted from the restaurant’s suppliers. The trio of chef-owners – Luka Balac from Serbia, Albert Franch Sunyer from Spain and Carlos Henriques from Portugal – met at Helsinki’s Chez Dominique and set about forging a new path for themselves with a short menu of nose-to-tail Finnish ingredients, fish and veg especially; only wine and olive oil are sourced from abroad. Anything left over goes straight into a composter, though we can’t imagine anyone leaving a scrape of cooking this good behind on the plate.
