A love of lake and land combine with an artistic devotion to showcasing Finland’s bounteous larder at Sasu Laukkonen’s Ora. Set on a colourful street near Helsinki’s Eira Park, the six-course menu sways with the micro-seasons. Think local produce meets modern technique. Here, simply named dishes belie their ballsy, complex flavours and are served to punters by the chefs themselves. Perch, fennel and cucumber, malt Saimaa pork with cabbage and chanterelles and wild rose, raspberries and anise hyssop are exemplary. The space – small, intimate – fits the blueprint for fine dining with handmade local furniture and pared-back styling.
