Palace

Helsinki, Finland

There are splendid views of the South Harbour from this 10th-floor, dinner-only dining room, originally built as a hotel for the 1952 Helsinki Olympics and now presided over by Finnish chef Eero Vottonen. Japanese influences are brought to bear on Nordic ingredients, whether Danish hiramasa (yellowtail) with kombu and gooseberry ponzu, or Finnish wagyu with preserved truffle and leek, on a seasonally changing tasting menu of 15 or so courses marked by well-balanced, delicate flavours and proudly served by the chefs themselves. Spare some time for a cocktail in the bar beforehand: if the weather’s fine, there are blankets to take out onto the terrace with your drinks.
