Le Mermoz
Paris, France
With the arrival of ‘neo-bistro’ Le Mermoz, Paris foodies have been thanking their lucky stars that chef Manon Fleury set aside a possible career as an Olympic fencer to instead concentrate on food. Following stints at L'Astrance and Sémilla, Fleury here serves up a daily changing, great-value, vegetable-leaning menu at lunch and tapas-style small plates for dinner. Think pan-fried cockles with a sauce made of candied lemon, fresh coriander and kasha (grilled buckwheat); or an orange, date and almond salad with Earl Grey cream. Don’t miss dessert: perhaps a confit of kumquats served with toasted hazelnuts.
