With most of the fresh, seasonal produce that winds up on the plate sourced from within the 37 acres of farmland that surround the restaurant, Farmlore in Bengalaru takes it farm-to-table concept extremely seriously. Devised by founder Kaushik Raju and chef patron Johnson Ebenezer, everything on the tasting menu is ethically grown and cooked over a mango wood-fired stove to honour ancestral techniques passed down from generation to generation. While ever-changing, heritage ingredients whipped into something wildly innovative have included the likes of yelakki (a banana native to India), moolangi (a type of radish) and pacha and manja (green peas and corn), to name just a handful, while pork and lamb have also made star appearances for more carnivorous patrons.
