The ancient Japanese concept of Keikoshoukon – meditating in order to find a guide to the present – is the inspiration behind Yusuke Takada’s La Cime, blending quintessentially Japanese produce with classical French cooking techniques. Every meal kicks off with Takada’s signature Boudin Dog, one-bite balls made with blood sausage and a hot dog painted with edible bamboo charcoal, a creation Takada attributes to training at the likes of Paris’s Taillevent and Le Meurice. Don’t worry though: if you’re a regular visitor the kitchen will adapt the menu so diners never eat exactly the same dish twice.
