A surprise location move brought Kyoto’s renowned Aca omakase restaurant to Tokyo, where chef-owner Tetsuo Azuma recreated his fabled Spanish omakase concept to almost identical acclaim. Unlike the larger original, this intimate Tokyo address is counter seating only, making it notoriously difficult to secure a reservation through the lottery system. Those lucky enough to snag a spot will enjoy a meticulously crafted 13-course meal, available in small or standard portions. Azuma masterfully blends the restrained simplicity of omakase with the bold, full-bodied flavours of Spain. Think dishes like sweet uni (sea urchin) gazpacho, tostada de anchoa with kohada instead of anchovy, and sobrasada made with horse meat instead of pork. Azuma introduces each dish personally, in Japanese and English, to the eight diners joining him for the evening. He’s assisted by just two chefs in a small kitchen behind the counter.
