Perched on the 37th floor of the cloud-tickling Mandarin Oriental Tokyo, Signature makes a great date-night destination: its well-spaced tables are granted additional privacy through the clever use of silver screen dividers, and the contemporary space is flooded with sunlight by day and illuminated by the dazzling urban skyline by night. There’s even live jazz, on occasion. The menu, meanwhile, presided over by chef Nicolas Boujema, sees classic French dishes reimagined to take into account Japan’s bountiful larder – a perfectly seared and plated A5 Hokkaido wagyu, for example, oyster bavarois with caviar and, to finish, a brown sugar tart that even those who usually skip dessert end up raving about.
