It’s not just non-meat-eaters that rave about Niya; the vegan restaurant – Casablanca’s first – has developed a loyal following since it was opened in 2021 by local cultural mediator and creative producer Chama Tahiri. Located in the hip Gauthier neighbourhood, the dining room is designed to look more like the living room of an avant-garde friend than a restaurant, with orange leather sofas, mismatched chairs and big bookshelves. Representative of the tightly curated, seasonally changing menu is the miso-dressed salade de kale d’été, packed with kale, chickpeas, nectarine, avocado, green beans, red onions and almonds and the “low-carb paella”, made with iodized saffron cauliflower rice. Gluten-free options include couscous, pizza, pancakes and chocolate cake.
