Jordy Navarra – formerly of The Fat Duck in the UK and Bo Innovation in Hong Kong – aims to capture the terroir of the Philippines on each plate through locally sourced ingredients. His menus are scattered with references to popular culture and elevated by clever plays on flavour and texture. Signature pork barbecue skewers made from three cuts of meat and finished in bone broth are a gourmet take on the classic street food, while a complex salad references the children’s folk song ‘Bahay Kubo’. Toyo broke onto Asia’s 50 Best list in 2019, after winning the Miele One To Watch Award in the previous year.
