With an English mother, Filipino father and childhood spent mostly in Spain, one would expect Josh Boutwood’s food to be something of a fusion of Europe and the East; the delicate, technically complex dishes on Helm’s eight-course tasting menu are far harder to categorise. A focus on seasonality and local ingredients nod to his time under Raymond Blanc at Le Manoir aux Quat’Saisons, England, while artful presentation – think colourful powders and crab fat broth served in a shell – has more than a familiar resemblance to certain dishes from Noma, Denmark (where he also did a stint). With just ten seats around a U-shaped counter, Helm offers serious gastronomes an unmissable chance to watch one of Asia’s most exciting young chefs create culinary magic.
