Indian-born chef, consultant and hospitality guru Jiggs Kalra likes to look to lost cooking styles as inspiration for his creations in the kitchen at Masala Library. And it has firmly found its footing inside the Fairmont Doha hotel in Qatar. The menu encourages a theatrical and get-involved type of experience, served within the creamy white high-ceiling walls of this modern glitzy restaurant (the views over Doha are pretty sweet). An ever-smiling and attentive team dance across the room carrying thick-cut ceramic plates of hand-pulled chicken, nests of saucy fish and jalebi (fried sweet snacks) caviar.This sort of inventive and imaginative approach to cooking seeps into the mixology, too, with one lemon concoction even going so far as to come served on a metal-wired toy bicycle. It’s quirky, it’s fun and certainly packs a flavourful punch.
