Sitting at the confluence of flavour, Ms. Maria & Mr. Singh opened without sing-song back in 2020. Conceived around a fictional love story of the merging of two cultures – Indian and Mexican – it’s perhaps little surprise that the man behind it is high-flying chef Gaggan Anand. So, what to expect? A riot of colour, flavour and funk. Part Day of the Dead diorama, part colour-block dream, it’s more like popping over to a friend’s house for a celebratory supper – especially with the generous outdoor terrace. The perfect hybrid. Much like on the food front. Anand’s signature looms large over local crab curry with paneer quesadillas, while papdi chaat and shredded pork vindaloo wraps see him lifting the quotidian to new heights. As the neon sign reads: ‘Love should never be mild’: expect punchy flavours at a do-able price point.
