Before finding a permanent home in the cozy second-floor alcove above Gage & Tollner restaurant in Brooklyn, Sunken Harbor Club began as a pop-up series at Red Hook bar Fort Defiance. The wood-clad nook, made to look like the inside of a pirate ship, is decked out with a dizzying array of design details that help deliver on the promise of immersive escapism, including antique Japanese fishing floats, hemp mooring lines, and taxidermied fish. Rum is the star of the backbar, with over 50 bottles available to pour at any given time; the Commodore's Collection features rare offerings that will appeal to the most discerning rum aficionados. Cocktail-wise, the menu is divided by adventure: lightweight and refreshing drinks from the In the Shallows section, followed by more potent options in The Abyss, and extra-adventurous options in The Twilight Zone. For non-tipplers, a small selection of alcohol-free options are available. Walk-ins only.
