One of the pioneering cocktail programmes in Arizona’s capital – helmed by Libby Lingua and Mitch Lyons, both formerly of Barter and Shake Hospitality – Highball is a dimly lit speakeasy-style lounge located on the second floor of a historic building in downtown Phoenix. The lengthy cocktail menu has something for everyone as it is organised from light to full-bodied, with a handful of clarified cocktails and others that are stirred and boozy. Each drink features an unexpected combination of flavours, many including housemade ingredients. A cheeky selection of house shots – including PTO, a passion fruit daiquiri, and the house-blend aperitivo and amaro – keep the mood refreshingly unpretentious. If you’re with a group, the large-format punch option gives guests the choice of base spirit and a list of flavouring options (think lemon, pineapple, lychee etc.), with an optional champagne topper.
