With an interior design scheme that recreates the hull of an 1800s clipper ship, UnderTow is Phoenix’s premiere themed cocktail bar. Located within Barter & Shake's sprawling Century Grand, in the Arcadia neighborhood, rum takes centre stage via an extensive menu that covers both classic tiki cocktails and modern creations made with rums from around the world. Attention to detail is carved into every piece of decor, and UnderTow offers more than the usual tiki kitsch with its immersive, multi-sensory scheme; custom soundscapes and video loops displayed in porthole windows transport and delight. For rum aficionados, ask for information about the monthly Captain's Keep program for special allocations and vintage offerings. And because the bar is quite small — only 44 seats — reservations are recommended for the 90-minute seatings, though they do accept walk-ins as well.
