On the 51st floor of the St Regis Hotel, Sushisamba is a camp, colourful carnival of diners, drinkers, dancers, DJs and disco balls. The franchise draws on cuisine from Japan, Brazil and Peru, with a menu that maps out a journey from Asia to South America and back by way of crispy tofu taquitos in spicy ginger soy, salmon ceviche with passionfruit and aji amarillo (a punchy South American pepper), and charcoal-grilled shortribs in chimichurri. On Thursdays, the dining room transforms into a high-energy dancefloor with live music and show-stopping samba performances. In the open kitchen, the chefs put on a performance of their own, slicing and sizzling behind the robata grill and showing off their maximalist presentation, an art form of its own that competes only with the 360º view over Dubai’s striking skyline.
