From the moment you enter this Hanoi hideout, you’re greeted with dark mahogany woods, deeply detailed emerald walls and warmly lit orb lighting. But when it comes to the 12-course tasting menu, it’s all forward-thinking. At the heart, the food is traditionally Vietnamese; but far from big bowls of steaming soup, the founding duo of Sam Tran and Long Tran have worked hard to create a thread around influences from their time spent abroad (Australia, UAE, Thailand and Singapore respectively). The couple returned home specifically to open their dream restaurant together.Rotating with the seasons, there is also a zero-waste and nose-to-tail philosophy, making the most of the ingredients and textures that Chef Sam Tran has worked hard to source. Meanwhile, Long Tran brings his expertise running front of house operations at some of Asia's most lauded establishments, including Meta and Seroja in Singapore, to bear on the dining experience..
