When renowned chef Roberta Sudbrack closed her flagship fine dining restaurant – then a regular in Latin America’s 50 Best Restaurants – in 2017, she went on to open Sud, O Pássaro Verde, a light-filled café on a quiet street in Rio de Janeiro’s Botanical Gardens neighbourhood. A casual space that is popular for both lunch and dinner, Sud serves high-quality cuisine using local produce from small-scale farmers. At the centre of the kitchen and visible from the dining room is a wood-fired oven that churns out hearty showstoppers such as grandmother’s own caipira rice with roasted vegetables, or fried egg with Brazilian bottarga. While the name literally translates as ‘the green bird,’ Sudbrack says it actually means ‘freedom’: this is a no-reservations, no-pretensions spot where diners needn’t worry about dressing smart – just come as you are and prepare to enjoy comfort food in a super-laidback setting.
