Toto’s minimalist, grey façade drops no hints about the colourful cuisine that awaits within. Occupying the ground floor of a three-storey building in Ipanema, the dining room continues the exterior’s white-and-silver palette, featuring grey pendant lights, grey metal bar stools, a monochrome tiled floor, charcoal leather chairs, and glossy wood and marble countertops. That’s where the restraint and sobriety ends: chef Thomas Troisgros lets his imagination run wild on the menu. Inspired by the ‘bistronomy’ movement – blending the bells and whistles of top-notch gastronomy with the relaxed feel of a bistro – dishes are a vivid medley of flavour. Starters encompass the familiar and the unexpected – classic steak tartare or chicken-heart tacos, for example – while mains bring new twists to comfort food, with highlights such as grilled octopus with pumpkin purée, and ancho steak with cracked egg, caramelised onion and chips. Bonus points go to the menu’s helpful wine pairing suggestions, available for every dish.
