Unforgettable

Turin, Italy

This 10-seat restaurant is set in a former farmhouse, but don’t let the brick walls and sparse decor fool you: the food is what some might call future-facing, rooted in the power of plants with fish and meat as the sidepiece. With dishes served to a thumping techno soundtrack, chef Christian Mandura’s tasting menu delights diners with savoury garlic and white asparagus ice creams, verbena-spiked green bean salads and courgette flowers with a vanilla parfait. If you’re really keen on meat, you can book the Paradigma dining room and the team will design a menu for the group produced from just one animal.
