Amman is a city of many sides. From the modernised pockets of its busy city centre to the ancient Roman ruins that have stood strong for many millennia, Alee can see them all, sat atop one of the seven hills that enclose the city. Alee juxtaposes its position in historic Amman with a modern and innovative approach to cooking. Behind the pass, chef Ali Ghzawi, the winner of Top Chef Arabia in 2019, has created a selection of dishes that represent his journey into the world of gastronomy, from its fledgling stage to the mastery he displays today. Each dish on the menu tells a story from his past or reimagines a formative culinary memory. Alee’s batata harra, for example, is a classic Jordanian dish that elevates the humble potato with garlic, coriander, lemon and shatta (a fermented local red chilli paste) and comes as a homage to his mother who first prepared him the dish. Ghzawi’s version sees skewered fried local cheese curds topped with a honeybuns mint emulsion, which transforms his childhood favourite tinned cheese sandwich into a snack fit for fine dining. Take a seat by the window, order a few plates and soak up the history of the city and one of its best chefs.
