Harmoniously composed signature dishes include the ‘rendang with structures of Savoy cabbage, sorbet of ginger beer and white soy sauce’, as seen in the six-course ‘Menu Toque Blanche’ while ‘Soenil’s Signature’ comprises three small plates that provide a succinct impression of the chef’s spiced-up French cooking style.
