Head chef Cory Campbell (ex-Noma, Copenhagen, Vue de Monde, Melbourne and Kokomo, Fiji) works with small suppliers to source top-notch raw ingredients – from Trevally Celeriac to Ruakākā kingfish and Te Matuku oysters – and knows how to make them sing in his cooking. Case in point: his innovative crayfish doughnuts, which offer diners an immersive, malty flavour sensation.
