Marble’s elusive chef-owner Abdulrahman Alsowailem may be enigmatic, but one thing is for certain: his restaurant is one of the top spots for a burger in Riyadh. Having begun life as a small pop-up, it was only open four days a week and offered a menu of four items. Now, diners are welcome for lunch and dinner Monday through Saturday, and are given the pick of the bunch, from mains like a melt-in-the-mouth brisket, eight-hour smoked ribs, or a classic ribeye steak.
