Part scientist, part bartender, Makita Takafumi, the owner of Lab in Taipei, has created a cutting edge cocktail bar with a minimalist aesthetic. With barely any decor in this monochrome space, sleek lines and surfaces throughout and dim lighting, the focus is squarely on the drinks themselves. The cocktails – frequently devoid of any colour too – are made using a variety of techniques, all employed to make the most of their ingredients, which include herbs from the bar’s own garden. The result is a compelling and inventive collection of cocktails including new takes on classics such as the cuba libre or old fashioned. There’s also a selection of aromatherapy-inspired cocktails, an array of caffeine-spiked sips and a section full of differnt flavour profiles to encourage guests to mix up their own desired drink.
