As in the name, this bolthole of a restaurant is all about punchy Peruvian plates with a strong focus on the freshest ceviche you can get your hands on outside of South America. It opened in 2022 in Dubai’s JLT Time Out Market, led by self-taught chef-owner Penelope Diaz, and there are only 26 seats for fans of the zingy fish dish to claim. But it’s not fussy and sticks to simple and original recipes from Diaz’s home.The chef-patron herself is often on hand to greet, welcome and check on your spice levels before you order too. It might be worth kicking off with the clásico which sees citrusy seabass drenched in tiger's milk, onion, sweet potato, and crispy corn while the scallops tiradito hits a little harder, topped with a rocoto chilli. Bigger plates of baby duck rice or slow-braised lamb are equally good, as is the tres leches cake for a sweet hit.
