Ossiano may be one of scores of restaurants within the Atlantis The Palm property, but nowhere else has a dining room quite as unique as this venue. Where other kitchens may place an open-plan kitchen or a jazz pianist as the centrepiece of their restaurant, Ossiano boasts a different spectacle, placing its diners in the middle of a functioning aquarium. Here, dinner is served against the backdrop of sharks, rays and a spectrum of other fish swimming just a few metres from the table. The vast tank of water enclosing the area illuminates the whole dining room in an inviting blue hue. But Ossiano isn’t just about aesthetics. Dishes here are expertly executed by chef Gregoire Berger and are, unsurprisingly, centred around seafood. Its tasting menu, delivered in ‘waves’ (courses) draws inspiration from various cuisines across the Mediterranean to deliver refined renditions of seafood classics, such as the Marseillaise bouillabaisse of red mullet in a spiced tomato sauce, alongside sweet shrimps with a nori and dill emulsion.
