It's not often that a bar is centred around soft drinks, but here at PS40 that's quite literally the case. The venue makes it home around the brand's bottling apparatus. Made using local ingredients and no preservatives, varieties include PS Bush Tonic (made with quinine extracted from red Peruvian cinchona bark, lemon and lime zests, lemon myrtle and native lemongrass). Each soda has a recommended spirit pairing, and the ten-strong list of festival-inspired cocktails (Burning Man, anyone?) are made with similarly niche produce.
